Jacob Siwak of Forsythia is on a mission to reinvent what a restaurant can be. It’s no secret that the restaurant industry is not for the faint of heart. After stints cooking at some of the best kitchens in New York - including Olmsted and Misi - Jacob went to work in Rome and experienced firsthand a different kind of restaurant that is centered around the needs of people: both the workers and the guests. He returned to New York to open Forsythia, a Roman restaurant with a foundation in Italian cooking and New York hospitality.
